Eno Sarris: I don’t know about aging for most beers. But if you drink a beer and it feels ‘hot’ — the alcohol comes through too much — I do think aging can help a bit. The biggest difference I’ve seen on aging is in Goose Island Bourbon County Stouts, I’d almost automatically decide to age those.

There are ways to use baseball research to put yourself in the right place for success. Think of the GM versus the Manager. The GM thinks saber and finds value. The manager tries to put those pieces in the right place.
