: I would note that I have not always been a vegetarian and have had many chilis in my life. But a well-made, slowly cooked vegetarian chili, with kidney beans, red beans, mirepoix, tomatoes, hot peppers, cashews, salt, pepper, cumin, and curry (with room to get creative with vegetable additions), is better than any chili with meat that I have had at any point in my life. It’s not an ethical argument, either, about the meat processing industry (though if you are going to eat meat, you should look for sustainable sources). Vegetarian chili is just better.

I’ve been to Chicago Diner. I’ve eaten the “taco” salad… fully vegan, and vegan mozzarella sticks. With seasoning, they can get close to the correct flavor, but the textures are really weird. The “cheese” in the mozzarella sticks was really runny. They made a really good effort, but some things aren’t meant to be duplicated.
