Comment From Sir Nerdlington
Very impressed with Jayson Werth’s balanced approach when writing his own 2015 FG+ commentary. http://www.fangraphs.com/st…

12:00
Eno Sarris: That is an impressive typo.

12:01
Comment From Alex
Who has a bigger 2015 fantasy season, Albert Pujols or Carlos Santana?

12:01
Eno Sarris: I’ll bet on the younger guy, actually!

12:01
Comment From Rick
Stay away from Rockies players in h2h because of home/road inbalance?

12:02
Eno Sarris: Nah, maybe just stay away from stacking the team. Or, if players fall to you, stack the team and then trade mid-season.

12:02
Comment From Jays Fan II
I don’t recall being as gutted as I was when the news came out about Stroman. I’m still heartbroken.

12:02
Eno Sarris: It’s so bad.

12:03
Comment From Dudaaaaaaaaaaa!
Zips w/z-scores has Lucas Duda ranked around 25th overall in in a 5×5 OBP league! How high would you have him?

12:03
Eno Sarris: Man I saw that in TOUT and ended up picking him to be my first baseman, so I hope it’s right. The only thing I can say is that I’m not sure about the PA projections. Duda gonna be platooned.

12:04
Comment From American League Scout
Hi Eno. Kind of random question but my AL-only auction is this weekend so I’m really hoping you could do me a huge favour and rank the following OF for me: Beltran, Rusney, Jennings and AJax. Thanks so much!

12:04
Eno Sarris: With injury, maybe Jennings Rusney Ajax Beltran

12:04
Comment From Chris w a C
Will shifts hold C. Davis back? O/U 32 HR’s .325 OBP?

12:04
Eno Sarris: Can’t shit a homer, so over on the HRs. OBP? Could be under, but I still like him for some bounce back.

12:04
Comment From Bobby Blownilla
Seen or heard anything on Archie Bradley’s stuff in Arizona? Impressions on Alex Jackson? thanks!

12:05
Eno Sarris: Talked to Bradley and he’s working on the change. He did add a slider, so if the change doesn’t work out (hasn’t really looked good so far), he has a backup plan.

12:05
Comment From Saves Vulture
Favorites to close in Tampa and Houston right now?

12:05
Eno Sarris: Boxberger and Qualls. Dark horses Jepsen and Fields.

12:05
Comment From Chad
So was someone really saying yesterday that Joey Votto was worse than Ryan Howard?

12:06
Eno Sarris: I hope he shows up here because he followed me even though FanGraphs is for nerds. It’s even worse. He’s touting RBIs.

12:06
Comment From Anthony
Is Aaron Sanchez worth a pick in my minor league draft over a guy like Rodon? Did Stroman getting hurt end any chance of him going to the bullpen?

12:07
Comment From Bobby Blownilla
Looking for a LF/OF5 in a keep forever OBP/net steal league. Can pay more for J. Upton or CarGo or could pay less for Zobrist, Melky, or Cruz. My offense is already pretty dominant and I have tons of power. What move you prefer?

12:07
Eno Sarris: Nah, there’s still Norris there.

12:07
Eno Sarris: I guess pay less for Melky, who might fit your team better. But if you can get Upton for a discount, his power will translate.

12:08
Comment From Richard Kimble
I have to choose between Napoli and Headley as my final keeper. Ignoring position and based strictly on 2015 fantasy stats, who does Eno choose?

12:08
Eno Sarris: Napoli.

12:08
Comment From Lenard
Hi Eno, I drafted a middle infield of Kang, Semien, Lawrie, and Bogaerts. I know your high on Kang, but brief thoughts on the other 3 for this year?

12:08
Eno Sarris: Well I like Kang Semien and Lawrie as sleepers, but you got all of them on one infield. Might be a good idea to go get a Prado/Zobrist type to bring your floor up.

12:09
Comment From simply_jmo
eno over/under .5 times soler-baez-bryant go back-to-back-to-back in the regular season

12:09
Eno Sarris: Over but by .5

12:09
Comment From Shawn
TJ House interest you with the Gavin Floyd news?

12:09
Eno Sarris: Very much so! Good command, has the pitches to succeed. Not much gas, but he’s a good pitcher.

12:09
Comment From sleepless in seattle
H2H points league, Lohse, Ervin Santana or Bauer?

12:09
Eno Sarris: Kinda liking Santana here. If he throws the changeup and his batted ball stuff normalizes, could have a really good year.

12:10
Comment From Miketron
I was surprised to see projection systems like Wilmer Flores so much. Would you rather have him or Chris Owings?

12:10
Eno Sarris: In real life? Owings for sure. This year for fantasy? Maybe Flores. Owings hurt his rotator cuff or labrum, either way not good for power.

12:10
Comment From Texas Dolly
Thoughts on Ryan Rua as a potential sleeper this season?

So we’re in Phoenix tomorrow for some games (and a bar trip to that Sabremetric whozitz thing), didn’t you say there aren’t many decent sour beers in town?

12:12
Eno Sarris: Well I wrote about it today. http://www.beergraphs.com/b…

I think Arizona Wilderness in Mesa has a sour (weisse though). Otherwise, Bevmo has a couple Berliner Weisses and a sour or two. OHSO said they won’t be tapping a sour for a while. So not a great place for sours.

12:12
Comment From Bryce
Favorite AZ beer you tried this week???

12:12
Eno Sarris: OHSO I’m in Love With the Coco. Liked the Oak Creek Nut Brown.

12:12
Comment From Lenard
Given he seems fully healthy and has a dramatic shift in home park factors, thoughts on Brandon Moss’ power output for the year? Do you think he has an outside shot at hitting 40?

12:12
Eno Sarris: I’ll bet on 35 and be happy with him.

12:13
Comment From toppleprone
Hi Eno. Do you have any formula for adjusting rankings for OBP instead of BA? Same thing for QS over Wins. My league plays both. Thanks!

12:13
Eno Sarris: Use the auction calculator and sort by dollars!

12:13
Comment From Rotographs Tiered Rankings?
Hi Eno…I think you mentioned last week that tiered rankings for the upcomping season would be coming up soon. Do you have an updated ETA? (I don’t think I’ve seen them come out yet.) Thanks!

12:13
Eno Sarris: I’ll tell them to get on it, but we also need to do Bold Predictions!

Comment From Pale Hose

12:14
Comment From Mookie Betts
The red sox are just putting a show on for castillo and victorino right? They are aware I am significantly better than them right? No way I start in aaa?

12:14
Eno Sarris: I can’t see it. Nothing more to do down there.

12:14
Comment From Korean Food in the Bay Area
Last week you mentioned that you love Korean food. Have you tried Jang Su Jang in Sunnyvale/Santa Clara? Their BBQ is prob the best in the area. Hite or OB with Korean BBQ and you got yourself a meal.

12:14
Eno Sarris: Posted so I can save it.

12:14
Comment From Jon
Hey, Eno! I need to add a starter after losing Stroman. Who do you like for upside/realistic ceiling? Best options are: Lohse, Peavy, Chase Anderson, Garza, Leake, Miley, Elias, Niese, Rubby De La Rosa, Webster, Burnett, House, Happ, Foltyniewicz. If two are close I can possibly add both for now. Missed out on deSclafani or he’d be in the mix, too.

12:14
Eno Sarris: Anderson. The vets ahead of him have floor, but Anderson has upside. House right there too. Try to get both somehow.

12:15
Comment From AL-LABR Fan
Excluding the team you drafted, can you point out a few of your favorite value buys from the auction?

12:16
Eno Sarris: Kiermaier for $8. Miggie for $35.

12:16
Comment From Marty
Shouldve started us with a song from Lilghthouse.

12:16
Eno Sarris: Or Lifehouse even!

12:16
Comment From DT
for what it’s worth, really difficult to follow along with the live chat via the new format. Still love what you guys do, but find it easier to read the draft after you post it

12:16
Eno Sarris: Hey aren’t new things coming in at the bottom? I changed that setting.

12:16
Comment From El Guapo
What do you make of the Toronto rotation and pen with Stroman gone?

12:17
Eno Sarris: Still think decent chance of Norris as the five and Sanchez as closer, and if Norris does well and Pompey hits and Saunders comes back ok, the team still has a chance.

12:17
Comment From Mark
Who are some people on the DL that can have a reasonable impact in June+ who will likely go undrafted and are worth stashing?

12:17
Eno Sarris: Patrick Corbin, Ivan Nova.

12:17
Comment From El Guapo
Matt Harvey makes me hot. Talk me down from picking him ahead of guys like Hamels, Price and Greinke.

12:17
Eno Sarris: I think he’s about the 12th-best guy so I guess I’m with you. Though I have Price and Greinke ahead of him.

12:18
Comment From Vic
Please rank using ….to show gaps. 12 team NL only 5 x 5 with a small minors component. I can choose between JP Crawford, Schwarber, Winker, and Peraza. Is that the order you would go with?

12:18
Eno Sarris: Crawford…. Schwarber ……….. Winker .. Peraza

12:18
Eno Sarris: Might be worth taking Peraza ahead of Winker if you want to see what’s up, quickly.

12:19
Comment From Lily
I saw your TOUT Wars draft… Could you please explain the Cargo pick? Your not worried about his health? Lack of SB?

12:19
Eno Sarris: I took him after forty picks were gone and backed him up with De Aza on the bench. I feel like that combo is going to >> 40.

12:20
Comment From Mile
Why do the auction calculator dollar values not add up to the total expected spend? For example a 12 team league with a $260 budget should have dollar values that add up to $3,120.

12:20
Eno Sarris: if it doesn’t it’s probably a rounding thing.

12:20
Comment From Andy
Can you point me to a good location for projected batting lineup orders, and also who is the Closer for every team?

12:21
Eno Sarris: baseball press used to have some sort of lineup thing, I think maybe roster resource does. As for closer… http://www.fangraphs.com/fa…

12:21
Comment From Con
In a S+H league – Who should I keep? Neshek or Feliz?

12:22
Eno Sarris: Feliz. The closer gets more chances than a guy in a crowded pen that might be the setup guy or might be a roogy.

12:22
Comment From Alex
It seems like a lot of talk about Anthony Rizzo’s breakout is because he figured out lefties last year. How do we know that he actually figured them out and it wasn’t just a fluky year?

12:22
Eno Sarris: Look back to 2013 and see that his peripherals against lefties were fine. He struck out and walked at reasonable rates, just had a terrible BABIP. Then last year his BABIP was more normal and he was fine. He’s fine against lefties.

12:22
Comment From Guest
the news about Stroman sucks but that why i wait to the very end of spring training to draft, how much did you pay for him?

12:23
Eno Sarris: LABR drafts early so it can serve as a guide to everyone. I paid $20 in an AL-only and will get that money back in FAAB so I’m rooting HARD CORE for a Hamels trade.

12:23
Comment From ACDC
Your feelings on Wong … possible 15 hr/30 sb?

Replace fangraphs stroman mancrush with _______?

12:24
Eno Sarris: Drew Hutchison, same team, similar tweaks to arsenal, good pitches?

12:24
Comment From Bo doesnt know
Daniel Norris, Jimmy Nelson, Henry Owens, Alex Meyer – who do you want for the next 4 years?

12:24
Eno Sarris: Not Nelson. I guess my mancrush is on Owens, so him, but Norris decently close.

12:24
Comment From Bojack Horseman
Eno, my first ever auction draft is this weekend. Any tips?

12:26
Eno Sarris: Use your value sheet almost as a ranking sheet once the auction gets going. In other words, don’t pass on *every* top 15 player just because they all go for more than your sheet. Go get a guy ranked 10-15 on your sheet and try to get him for less of an overpay. You have to buy into the top players. Then you’ll start to see patters versus your sheet. If it’s an only league, make sure you have good lists of who’s available so you’re still on top of it by the end.

12:26
Comment From Rob
Brandon Drury is looking really good this spring, but he’s kind of without a position. He’s a big guy, do you think he will be able to handle 2B?

12:26
Eno Sarris: Lamb isn’t great. Drury will edge his way on to this team some time this year, just don’t know when or where.

12:26
Comment From Gregor Blanco
Why are there questions as to who should replace Pence? I’m obviously a capable starting outfielder!

12:27
Eno Sarris: No homers I guess. But that didn’t stop them from signing Aoki.

12:27
Comment From Ceetar
Heard Yankee Stadium’s taps are particularly filthy. You think any of the stadiums pay any attention to this sorta thing?

12:27
Eno Sarris: If someone gets sick… I bet the crafty stadiums do think about it. I mean, Ballast Point runs a bar inside Petco. They probably care.

12:27
Comment From RPR
I think I might be obsessed with the concept of a TJ House breakout campaign. Am I onto anything here?

12:27
Eno Sarris: He’s good, that’s what you’re on to! Soft tossing lefties sometimes get overlooked.

12:28
Comment From L. Scott
Will JJ Hardy bounce back and produce 20+ HR like he usually does? Is he a nice late SS target in your opinion? Would you rather have him or Jhonny Peralta for 2015?

12:28
Eno Sarris: Just worried about his back problems.

12:28
Comment From jeff
Do you normally roster elite K set up men like Davis, Miller, Giles? I’m hoping to pair them (Davis and Holland) to keep rates down and pick up extra saves when Holland gets a night off

12:28
Eno Sarris: I’d rather the guy was on a different team so that you were also prospecting for saves, if it’s a saves league.

12:28
Eno Sarris: Like an Ottavino.

12:30
Comment From Guest
will Peter O’Brien really hit 26 homers?

12:31
Eno Sarris: No, but he might actually start 60% of the D-backs games at catcher this year.

12:31
Comment From Brad
What would Michael Taylor have gone for in NL LABR if it had been done after the news of the Denard Span injury. What would you have paid?

12:31
Eno Sarris: 3-4 bucks. Can’t go higher because at some point he’s off the top three on the depth chart.

12:31
Comment From Rob
Randall Delgado has looked really good this spring, his changeup making hitters look kind of foolish. Is there hope still hope for him as an effective starter?

12:31
Eno Sarris: I heard he was 92-95!! Command looking good. I gotta go get a share.

What does a 2015 Nolan Arenado ceiling and floor look like? .300 25 homers the ceiling? .270 15 the floor?

12:33
Eno Sarris: I’ll take more batting average on the floor, but yeah that’s good.

12:33
Comment From George
Expecting good things from Mike Fiers this year? I like him but I’m cautious.

12:33
Eno Sarris: Yeah he made some adjustments — the cutter got harder, he moved on the rubber — and I think with 12 and 14, we can believe.

12:33
Comment From Nelson
Any team defenses get much better in this offseason to the degree that their pitchers might see an unprojected improvement?

12:35
Eno Sarris: gotta watch Cleveland with Lindor coming. Also, what about the Yankees? Didi/Headley >>>>>>>>>>>>>>>>>>> Jeter/ARod/flotsam.

12:35
Comment From zurzles
what kind of MI should i try to trade MCab or Rizzo or Goldschmidt for? I don’t know if I really have any other options than Altuve/Tulo/Rendon(maybe)

12:36
Eno Sarris: Maybe Goldschmidt, based on drafts. I like going for Tulo if it’s a shallower league roto, you’ll always have an Aybar when he’s hurt. If it’s H2H or deeper, maybe Altuve. higher floor, more health.

12:36
Comment From hack
So I lost Stroman for the year – so my avg rotation just got worse – who should I target with this rotation: Sale, Wood, Hughes, Bailey, Kazmir. It is definitely light in my league (bottom 3 rotation) – Ideally someone equal to wood.

12:36
Eno Sarris: I think that rotation is good. Just add quantity at the bottom off the waiver wire. I dunno who’s out there.

Comment From tell it goodbye
More likely to win AL CY Sonny Gray or Alex Cobb?

Eno Sarris: Healthy Cobb.

Which Braves player producer the most value this year: EY jr, jace peterson, or Eury Perez?

Has there ever been a recollection of events as incredible and poetic as Ice Cube’s It was a Good Day?

Comment From JoeyNotto
Why do all of you think base ball can be played on a computer? Any of you ever suit up?

12:38
Eno Sarris: We have three adult league players on FanGraphs staff. Two former college players. One former AGM writes for us.

12:38
Eno Sarris: Ladies and gentleman, here’s the dude that thinks RBI are a good stat!

Eno Sarris: And that Howard>Votto!

what does a beer snob drink on st patricks day

12:39
Eno Sarris: A green lager if you’re asking this one. Not every single beer needs to be a whale you can brag about.

12:39
Comment From Nelson
Last year I read that Colby Rasmus bunted against a shift and Colby Lewis took offense to it. Is this an unwritten rule thing and a reason you dont see more bunts against shifts? Have you asked anyone about it?

12:40
Eno Sarris: Could be a Colby thing, really. It’s stupid. If it’s not against a written rule, and it could help your team win, do it. I think MLB management, from what they’ve said, would support players bunting against the shift.

12:40
Comment From The Big Dipper

Is G. Richards for real? If so can I get a quick upside projection?

12:42
Eno Sarris: Just look at last year. Yeah the dude spits fire, has an awesome slider, and can use the curve against lefties.

12:42
Comment From Maxamuz
Aybar is my SS. Not flashy or sexy, but when the rest of my team is stacked, I can get by with Mr. Aybar.

12:42

Comment From Matt
Eno, really really enjoy your work, but i have a question about one method of analysis that bothers me a bit. I’ve seen you pump Anthony DeScalafani as a guy w/ three pitches to start. DeSclafani threw a grand total of 34 changeups per brooks last year. How can we learn anything from that sample when the scouting consensus seems to be he doesnt have a good changeup? (klaw called him a one pitch guy w/ command, fwiw) Is there some other info on which your basing your assessment of him or do you think that’s a reliable sample size? Again, really enjoy your work.

12:44
Eno Sarris: when I talk about DeSclafani’s change, I don’t talk about his results because yes, he threw 34. But you know what you can tell from 34 changeups? The shape. The velocity. His change has three inches more drop than the average change, two inches more fade, and the ten mph gap you like to get. Plus he improved it in the fall league. It’s a good pitch. Keith is great, he’s smart, we don’t always have to agree.

12:45
Comment From Randy Savage
Any opinion on Eovaldi’s splitter thing? Could be huge for him if it’s even average.

12:45
Eno Sarris: It doesn’t have as much drop as a good splitter, but it does have two inches more drop than his bad changeup. It could be the difference.

12:45
Comment From TheTinDoor
Harvey looks LEGIT so far. 17 mos post surgery. We ignore spring training STATS, but health is a different story. Where’s he at in your rankings? Moving up at all?

Are you down on Wainwright. Cuz I am, but I’m not sure where to cut that off, because he’s still really good.

12:48
Eno Sarris: Yeah I’m worried about his health. But if he’s your second pitcher… maybe you have to do that. Might have pushed him down too far.

12:49
Comment From Buck Showalter
I’ve been looking at Snider and De Aza a great deal in preparation for my upcoming AL-only auction. How confident can I be in either getting full-time at-bats this year?

12:49
Eno Sarris: Neither is going to get full-time atbats, but I feel pretty good about both getting strong side platoon atbats.

12:49
Comment From Matt
Thanks for answering, re: desclafani, and yes, reasonable minds can definitely disagree. The reason i ask is that i’ve not seen another positive report on it. So do you think the shape/velo do stabilize/become statistically significant after 34 pitches? not disagreeing, just asking to learn. thanks again.

12:50
Eno Sarris: Yes, I do. I mean, at that point you’re really asking if the cameras can pick it up right, and there’s not that much noise.

How did the whole 2 Catcher thing start and why? Why not a 2 SS league? Did they just hate people?

12:50
Eno Sarris: Yeah that kills me. Hate the two catcher thing.

12:50
Comment From Clock
Shane Greene the second coming of Corey Kluber? HOw much you like him?

12:51
Eno Sarris: No I don’t see that much in him. I mean, the change is actually pretty good by shape, but he doesn’t have the velocity gap. I like him, but you can’t call a Kluber. You can call that a guy is better than his projections, which I think.

12:51
Comment From LarryA
you got busted on a bit on XM fantasy radio the other day for your round 2 posey pick. They hosts were not fans of that one

12:52
Eno Sarris: Yah sure. My values liked catchers. I love love that team. 15 teams, two catchers, the last ten catchers or so are *terrible*. I wanted no part.

12:52
Comment From Pirates Hurdles
Maybe we should let JoeyNotto know that every GM in baseball thinks Howard is worthless. Amaro cant even give him away without paying all his salary, he has been trying to do it for 4 months.

12:52
Eno Sarris: I mean his GM said his team would be better without him.

12:53
Comment From ar
2 catchers is great because dumb people waste high picks on people that are only getting 400 abs

12:53
Eno Sarris: My Posey and Gattis combo will get 550-600 each.

12:53
Comment From RPR
Seems to be skepticism about Steve Pearce getting enough ABs, particularly against RHPs. He obviously crushes lefties, but he had a .360 OBP vs. RHP last year and .317 career. Why wouldn’t they hit him against righties?

12:53
Eno Sarris: A lot of batted ball luck against righties in there. That makes me nervous, as well as his age at breakout.

12:54
Comment From owensurett35
what are your thoughts on souza jr.?

12:54
Eno Sarris: I’m a little worried that he’ll K a bunch at the beginning and have a slow start. I might buy if I like the peripherals later, bought in one ottoneu points league where I needed upside, but age and K% makes me a little nervous.

How many SP should I roster with 3 SP and 3 P slots? 12 bench spots, but when does it get better to have an extra bat?

12:58
Eno Sarris: Three or four relievers (maybe one SP/RP). I’d go to maybe eight or nine starters. I love quantity. Bench bats are so meh.

12:58
Comment From Jake
George Springer over under 17 steals in 2015….also does he ever steal 30 at the major league level

Thanks re: Greene. We always talk about how injury prone pitchers are. Does that mean be averse to spending a lot on pitchers, or load up on them as a precaution? One league I’m in, everyone seems to be loading up, and I feel like I can capitalize on it if I trade some of my pitching, but I also am unsure if I then put myself at risk of “random pitcher death.” Thanks Eno!

12:59
Eno Sarris: I like to get mid-tier quantity. A bunch of good pitchers that cost less.

How old were you when you transitioned from crap to craft beer?

1:01
Eno Sarris: Well I had Sierra a bunch in college, but when I moved out of manhattan and stopped having to deal with lines at bars — I got hard liquor then because when am I going to get to the front of the bar again — I started drinking craft. So really not that long. 32 or so.

1:01
Comment From Joe
If you want to compete in pitching, does the mid-tier strategy really work? What used to be very good (3.50 ERA, 1.20 WHIP, 170 k’s) is a dime a dozen these days.

1:01
Eno Sarris: There’s always a few mid-tier guys that take the leap in my mind. And yeah, my pitching staff always kills it.

Cliff Lee, Kuechel, or Salazar as my SP6 in a 5×5?

Comment From asdf
Are any of the D-backs’ 400 pitchers they have in camp actually going to turn into a front-of-rotation kind of pitcher?

1:05
Eno Sarris: I don’t like Rubby’s delivery, so I think I’m out on him. I think Chase can be an SP2/3. Webster has the stuff to be an ace, but bottom tier command and terrible mound presence. Bradley has the presence, but badd command and change. I really like Braden Shipley.

I think people like tickling other people, because the tickler is doing something very small and getting a huge reaction. I think of internet trolling similarly. “Look! 1:11

Hey Eno, I love your chats and this is my first question. I drafted Addison Russell and Corey Seager back to back in my draft, the rules are eight keepers and only eligible if kept or drafted. Are either looking like good 2016 bets? Also, I traded my prized Yellich for Kolten Wong, both are good but I absolutely love Wong at 2B, thoughts on his production going forwards and fantasy ranking among 2B? Thanks!

1:15
Eno Sarris: both should be up by 2016. Russell is great, really like him, but Seager better fantasy upside. Big fan of Wong, that high leg kick is providing the power we weren’t sure he’d provide.

Hi a kind of long question but i would be really thankful for an answer, I live in sweden but i´m planning to study and play college baseball in the US, I´m looking for a school right now but for some reason i´ve heard that its not possible for me to join a d1 or d2 team because i´m 20 years old (in other words its been more then 1 year since i was in high school). Is this true? and if so should i try to join a d3 team, NAIA team or a junior college in california? I´m looking for a place thats the most competitive and trains the most (also i´ve heard that d3 doesn’t practice as much as d1,d2 true or false). Thanks in advance

1:18
Eno Sarris: I would guess that yes the d3 teams don’t practice as much. As for the first question… I doubt it’s true, but I’m not qualified to answer. I’ll poke around and maybe have an answer for you next week. Can hit me up on twitter too.

For wild/spontaneously fermented beers…why don’t bad bacteria or fungus ever get in the wort? and are good bacteria/fungus just hanging around waiting for wort to be open to the air and they’re all “time to get to work making tasty beer”

1:23
Eno Sarris: I think once upon a time, brewers opened up the wort and did it that way, but now things are much more precise. Goose Island brewers told me that Matilda was made by opening the doors in Chicago and letting Brett in off the wind, but the yeast guy at White Labs sorta scoffed at that idea. Said 99.9% of the stuff in the air is trash.

sour beer: pH and alcohol take care of a lot of the bad stuff you don’t want. most “spontaneously fermented” beers aren’t done that way (even though a lot of Belgian breweries claim they do), they use house cultures living in the barrels/foeders. some still use coolships or other means to introduce other truly wild cultures as well but most get out-competed by the house strains.
