The most extreme example I can think of is Gleyber Torres in 2019 just raked against the Orioles – 279 wRC+. Late career position change, and to a position that by definition doesn’t receive much playing time to establish a baseline for the player. The variance between the three projection systems on his page is the highest I’ve personally seen, especially for a guy in the majors.
